    Best Ever Cherry Cobbler

    Summer is a really busy time for our family. We're at more than 25 markets every week in and around Edmonton. Plus, back at home on the farm, Mom and Dad are working long hours tending to all the crops and harvesting them for markets. 

    Since we work so much, baking isn't something we really have time for! This week though, since the cherries are so darn good, we thought we'd turn some of the fruit into a sweet treat... Cherry Cobbler!

    P.S. We might be biased, but we think this recipe is best when made with our BC cherries!

    BEST EVER CHERRY COBBLER

    Yield: 8-10 Servings | Prep Time: 20 Minutes | Cook Time: 35 Minutes | Total Time: 55 Minutes

    Ingredients: 

    For the Crumble Topping: 

    • 1/2 Cup flour 
    • 1 Cup oats 
    • 1/2 Cup brown sugar 
    • 1/2 Teaspoon baking powder 
    • 1 Tbs cinnamon 
    • 1/2 Cup room-temperature margarine or butter (cubed) 
    • 1/2 Cup shredded coconut 

    Cherry Cobbler

    For the Cherry Filling: 

    • 4 Cups pitted Santina cherries 
    • 1/2 Cup melted margarine or butter 
    • 1 Tbs flour 
    • 1 Tbs lemon juice 
    • 1 Tsp vanilla 
    • 1/2 Cup brown sugar 
    • 1/2 Tsp cinnamon 

    Cherry Cobbler

    Directions

    1. Preheat oven to 350 degrees Fahrenheit. 
    2. In a medium bowl, combine all the ingredients for the crumble topping. Mix well. Let it sit on the counter while you're fixing the cherry filling. 
    3. Pit room temperature cherries.
    4. Add melted margarine or butter to the cherries. Mix well. Then, add flour and mix. Do the same with every other ingredient until they are all added to the cherries and mixed together well. 
    5. Pour cherry mixture into a 8x8-inch pan. Sprinkle the crumble evenly over the cherry mixture. 
    6. Bake for 30-35 minutes. Let cool for 10 minutes before serving. 
    7. Top with your favourite ice cream or whip cream (we liked to use Coconut Whipping Cream!)
