    Roasted Butternut Squash Seeds

    Butternut squash (really any variety of squash) is the perfect fall food - slightly sweet, nutty, and flavourful. There's a ton you can do with the flesh of the squash, but don't be so quick to throw away the seeds! Just like pumpkin seeds, butternut squash seeds are easily roasted. They make a quick, savoury snack full of protein and healthy fats.

    • Separate the seeds from the flesh. Collect in a bowl and run under water. Get rid of any strings or squash bits. 
    • Spread over a paper towel and let the seeds completely dry. 
    • Once dry, toss in a bowl with a bit of olive oil and salt. 
    • Spread evenly over a pan lined with parchment paper. 
    • Roast at 275 degrees F for about 10 minutes, or until seeds turn a golden brown. 
    • Let cool and enjoy!

    Roasted squash seeds work well with a lot of flavours, so get creative with spices! Garlic powder, cayenne pepper, cumin, oregano... the choices are endless!
