  • Raspberry Pistachio Cake

    Raspberry Pistachio Cake

Welcome summer! To us, nothing screams summer quite like Fresh BC Fruit.

We've been so busy selling fruit at all of our farmer's markets that we haven't shared a blog post with you in a while!

This week, we wanted to feature one of our favourite fruits, raspberries

Did you know that raspberries are an excellent source of vitamin C, manganese and dietary fibre? There is also a compound in raspberries called raspberry ketone that has been shown to increase metabolism in our fat cells. Pretty cool, huh?

With the unpredictable weather we've been having lately, we've been inspired to bake!

This recipe marries the unique flavours of rich, nutty pistachios and sweet, tart raspberries, bringing them together in an easy-to-make cake. This cake is perfect as a dessert for an outdoor summer BBQ or a celebration of any kind.

    Raspberry Pistachio Cake

    You will need:

    • 1 1/2 cup whole grain flour
    • 1 1/2 tsp baking powder
    • 1/4 tsp baking soda
    • 5 tbsp pistachio meal (ground pistachios)
    • 6 tbsp of butter at room temperature
    • 1 cup sugar
    • 2 eggs
    • 1/2 cup milk
    • 1/2 cup crushed pistachios
    • 1/2 cup fresh raspberries

Preheat oven to 350 degrees. Grease a cake pan or baking dish and set aside.

Begin by adding all of the dry ingredients into a bowl and whisk to evenly combine. In a separate bowl, beat the butter and sugar together until light and fluffy using and electric hand or stand mixer. Add eggs one at a time, then add the milk. Add the dry ingredients to the wet ingredients and mix well to fully incorporate.

Pour the batter into a cake pan or a baking dish, sprinkle with crushed pistachios and fresh raspberries. Bake for 50 minutes, until the middle of the cake is set. Let cool completely before serving.

  • Blueberry Peach Sangria

    Blueberry Peach Sangria

B.C.-grown peaches are only available for a few short months. But, that doesn't mean you can't enjoy peaches year 'round! When winter sets in, and we're wishing summer would come sooner than later, we like to whip up a pitcher of our famous Blueberry Peach Sangria. It tastes just like summer!

The recipe calls for peaches, but you can easily make it without. Or, add a few frozen peaches into the mix instead! Here's the recipe:

    BLUEBERRY PEACH SANGRIA

Yield: One Pitcher | Total Time: 5 Minutes

    Ingredients:

    • 2 Peaches sliced (frozen works, too!)
    • 1 Cup blueberries (fresh or frozen)

    • 1/3 Cup peach schnapps
    • 1 Bottle white wine (or club soda for virgin sangria)

    Directions:

    • Let it sit for 2 hours.
    • Serve with ice (or more frozen fruit) and enjoy!

What food or drink reminds you of summer?

Apple season is here! Since we've been apple-ly baking and cooking with apples for the past few weeks, we wanted to share a few recipes we recommend.

  • 5 Healthy Halloween Snack Ideas

    5 Healthy Halloween Snack Ideas

Ahhh, Halloween. While it's not really a holiday, it's a favourite among kids for one main reason: candy. Monitoring what your neighbours are handing out to trick-or-treaters is a little challenging, but if you're hosting a Halloween party for you and your family, it's much easier to limit the amount of sugar guests (and your kids) are consuming.

Instead of filling mixing bowls with chips, Tootsie Rolls, and M&M's, try making one (or all) these healthy Halloween snacks:

    Fruit Leather Apple Spiders

No bake, no problem! This fast and easy snack only requires four ingredients: apples, fruit leather, almond butter (peanut butter would work, too), and chocolate chips (or raisins). Next time you're picking up apples at the market, pick up some of our fruit leather for this recipe!

    Apple Peanut Butter Teeth

Another apple-based recipe for Halloween! These apple peanut butter teeth are even easier to make than the recipe above. Cut apples, slather them with peanut butter, and strategically place mini-marshmallows between the slices for teeth. You can also use yogurt-covered raisins/cranberries instead of the marshmallows!

    Fresh Fruit Halloween Cups

The easiest recipe of them all! These fruit cups require assembly and a little creativity. Place different types of fruit, preferably green grapes, into small, clear, plastic cups. Then, use your imagination and draw on faces!

    Banana Mummies

Sweet, filling, and healthy! This recipe is for chocolate-loving kids - the bananas are drizzled with both white and milk chocolate. Make sure you leave yourself enough time for this recipe as it can't be whipped up in a few minutes! The bananas need to be frozen prior to assembly.

    Graveyard Candy Apples

A spin-off from the traditional candy apple, this spooky recipe calls for apples, white and dark chocolate, potato chips (yup), nuts, M&M's, and edible candy eyes. You can pretty much use whatever you like to decorate and spice this apple, though!

Are there any healthy Halloween treats you like to make for your family at this time of year?
